Chicken Adobo The Next Big Thing
Could Filipino food, perhaps Chicken Adobo, really be the next big thing? More on that later. But first, what makes Chicken Adobo so beloved by many Filipinos? And why should you make it? It’s certainly the fan favorite in our house. And I love to make my Dad’s Chicken Adobo recipe.
What’s not to love? It’s super easy to make and very versatile. It’s good to eat for breakfast, lunch or dinner. You can even have it for merienda (snack), on a lazy Sunday afternoon.
Chicken adobo recipes can come in many different variations. By sticking with a few key ingredients, you can make many different versions, depending on how you want it to taste.
Marinating is the key to this dish. The longer the better. If you plan to cook our chicken adobo recipe this week, marinate your chicken for at least 24 hours to fully infuse the ingredients into the meat. But if you’re short on time, 30 minutes to an hour works fine too.
Browning or searing the chicken is an important part of the cooking process and should not be overlooked. By browning the outer part of the meat, it accomplishes a number of things:
- It caramelizes the natural sugars of the meat and creates a golden brown crust and color.
- Once the meat is re-introduced with the liquid, the crust dissolves and adds additional flavor to the dish.
- It also prevents moisture loss, keeping it moist so it doesn’t dry out.
- In my option, seared meat looks aesthetically better and improves the overall look of the dish.
After all, you don’t want to eat food that looks bad, do you? Then sear your meat!
